All quantities are interchangeable/adjustable by you – as long as the mixture isn’t too runny and/or isn’t sticky enough, chop and change as you wish. I used…
250g/9oz organic oats (use gluten-free oats if you are gluten-sensitive)
A good handful of flaxseed
50g/2oz toasted sunflower seeds
50g/2oz toasted pumpkin seeds
50g/2oz toasted walnut pieces
50g/2oz dried blueberries (or cherries/cranberries – whatever you fancy)
Two generous tablespoons of either organic honey or home-made apple jelly or other clear fruit jelly (or you could use agave syrup)
175g/6oz organic unsalted butter

Toast the oats and nuts/seeds for a few minutes in a pan keeping careful watch that they don’t burn. Remove from pan and allow to cool. Melt butter and honey/jam in a large saucepan and stir until well blended. Add oats and stir well. Now add all other ingredients and stir vigorously to mix evenly. Mixture should be glossy and sticky enough to hold together. If it’s not, add a little more honey. Pile into a 10″ x 10″ traybake pan or similar – you could also do these in a cupcake tin but grease the holes well first – and bake for around 12-15 mins in a medium hot oven (170-180C/350 deg F) until golden brown. These have a tendency to go from just right to burnt in a short space of time so do keep an eye on them! When you take the tray out mark out slices or squares with a knife and allow to cool. You can then cut the lines through and finish cooling on a rack. These will keep (if they get a chance!) for around 4 – 5 days after which they do go a little soft.
